The Perfect Homemade Granola

Shop-bought granola is rarely exactly how you want it. Many brands contain added sugars, cheap oils, far too many raisins (my personal pet hate!) and only small amounts of the ingredients you'd actually choose for yourself. Making your own couldn't be easier, and the best part is that there's no need to weigh or measure anything.

Simply add handfuls of oats, nuts, and seeds in whatever combination you enjoy. Whether that's pistachios, walnuts, pecans, almonds, pumpkin seeds, or a mixture of them all, you can create a granola that's completely personalised to your taste using high-quality ingredients.

Here’s my favourite mix:

Ingredients

  • 1 packet whole almonds, skin on, roughly chopped

  • 1–2 packets raw shelled pistachios

  • 2 generous handfuls jumbo oats (which for better blood sugar control than rolled oats)

  • 1–2 handfuls pumpkin seeds

  • 1–2 handfuls sunflower seeds

  • 1 packet whole pecans or walnut pieces

  • 1 handful unsweetened dried coconut flakes

  • Zest of 1 orange

  • Juice of ½ orange

  • 2 tbsp coconut oil, melted

  • 2 tbsp maple syrup

Method

Simply combine all the dry ingredients in a large bowl. Add the orange zest and juice, melted coconut oil, and maple syrup, then mix thoroughly until everything is lightly coated. Spread evenly onto a lined baking tray and bake at 160°C (fan) for 20–25 minutes, stirring halfway through, until golden and fragrant. Allow to cool completely before storing in an airtight container.
